Cookie dough is the best handled, rolled out & cut into shapes when it is not too sticky. Allowing it to chill in the fridge for a few minutes allows the fat content to firm up & and flour to absorb the liquid evenly.

 

GREASE LIGHTNING!

To keep your baking trays & dishes from bearing the brunt of recipes that stayed in the oven too long, it's good to grease. 

Yes, even non-stick containers could do with a thin coat of butter, oil or non-stick spray.

 

CLEVER COOKIE!

To keep your homemade cookies fresh for up to a week, store them at room temperature in an airtight container -be it a jar, a tin of tupperware. If the cookies contain lost of fruit or dairy, it's best to wrap then up and leave them in the fridge.

Otherwise, your baked goodies can be frozen for up to 3 months!
