Ingredients Dough:
3 tbs Golden Cloud semolina
3 tbs water
2 cups milk powder
2 tbs semi liquid clarified butter (ghee)
1 1/2 tsp baking powder
2 tbs Golden Cloud flour
5 tbs warm milk
Sunflower Oil for Deep frying
Ingredients Syrup:
2 Cups white sugar
2 cups water
1 tbs lemon juice
¼ tsp saffron strands
3 cardamom pods roughly pounded
1 ½ tsp Rose Water
Method Dough:
1. Mix semolina and water and leave aside
2. Add milk powder to a large mixing bowl and rub in clarified butter (Ghee) to form breadcrumbs
3. Add in baking powder and flour and mix through
4. Mix in semolina & water mix
5. Add in milk and start to form dough. Knead for 5 minutes until you get a smooth dough. Rest for 10 min
6. Shape into small balls and place on a tray. Ensure that there are no cracks in the balls
7. Heat oil in a flat pot and deep fry the dough balls in batches until golden brown
8. Drain balls and add into warm syrup
9. Leave in syrup for an hour at least
10. Serve either hot or cold with ice cream
Method Syrup:
1. In a heavy based pot, add water and sugar and bring to boil for 5 mins on high heat
2. Add in lemon juice, saffron, rose water and cardamom, reduce to medium heat and boil for another 4-5 mins until the syrup thickens to one string consistency
3. Leave on low heat until fried dough balls are ready to be dropped in
