Ingredients:
Passion Fruit Mocktail:
- 75ml Rose’s Passion Fruit Cordial
- 500-600ml Lemonade
- 3 tbsp mint, chopped
- 1 green chilli, slivered
- 1 apple, grated
- Ice, crushed
Sweetcorn & Chicken Lagan:
- ½ cup Golden Cloud Semolina
- ½ cup Gram/ Chickpea (Besan) Flour
- ½ cup Golden Cloud Flour
- 2 ½ tsp baking powder
- ½ tsp turmeric
- ½ tsp white pepper
- 1 tsp cumin powder
- one onion, finely chopped
- 3 tbsp fresh coriander, finely chopped
- 3 tbsp fresh mint, finely chopped
- 1 cup chicken stock
- 2 green chillies, finely chopped
- 1 tsp garlic paste
- 1 tsp ginger paste
- 3 eggs
- ½ cup milk
- ½ cup sunflower oil
- 419g Koo Cream style Sweetcorn Can
- Salt to taste
Method:
For passion fruit mocktail:
- Place the crushed ice in a jug. Add the cordial, mint, green chilli and apple into a jug.
- Top with lemonade.
Sweetcorn & chicken lagan:
- Sift and combine the semolina, flour, besan flour, and baking powder—Preheat the oven to 180C.
- Add turmeric, white pepper, cumin powder, onion, coriander, mint, chicken, green chillies, garlic paste, ginger paste and salt to the flour. Mix to combine.
- In a separate bowl, beat the eggs, milk and sunflower oil.
- Fold the egg mixture into the flour mixture, and fold in cream-style sweetcorn.
- Pour into a greased deep baking dish. Bake at 180C for 25-30 minutes.
Serves 4
