Banana Flavoured Cake and Muffin Mix

Passion Fruit Mocktail:

  • 75ml Rose’s Passion Fruit Cordial
  • 500-600ml Lemonade
  • 3 tbsp mint, chopped
  • 1 green chilli, slivered
  • 1 apple, grated
  • Ice, crushed

Sweetcorn & Chicken Lagan:

  • ½ cup Golden Cloud Semolina
  • ½ cup Gram/ Chickpea (Besan) Flour
  • ½ cup Golden Cloud Flour
  • 2 ½ tsp baking powder
  • ½ tsp turmeric
  • ½ tsp white pepper
  • 1 tsp cumin powder
  • one onion, finely chopped
  • 3 tbsp fresh coriander, finely chopped
  • 3 tbsp fresh mint, finely chopped
  • 1 cup chicken stock
  • 2 green chillies, finely chopped
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 3 eggs
  • ½ cup milk
  • ½ cup sunflower oil
  • 419g Koo Cream style Sweetcorn Can
  • Salt to taste


For passion fruit mocktail:

  • Place the crushed ice in a jug. Add the cordial, mint, green chilli and apple into a jug.
  • Top with lemonade.

Sweetcorn & chicken lagan:

  • Sift and combine the semolina, flour, besan flour, and baking powder—Preheat the oven to 180C.
  • Add turmeric, white pepper, cumin powder, onion, coriander, mint, chicken, green chillies, garlic paste, ginger paste and salt to the flour. Mix to combine.
  • In a separate bowl, beat the eggs, milk and sunflower oil.
  • Fold the egg mixture into the flour mixture, and fold in cream-style sweetcorn.
  • Pour into a greased deep baking dish. Bake at 180C for 25-30 minutes.
