Gingerbread Men are a popular choice of cookies during the Christmas holidays, baked with love and filled with nostalgia. Golden Cloud has an easy-to-follow recipe that will help you get into the spirit of giving and sharing.


Prep time: 15 minutes plus 30 minutes chilling time
Bake time: 15 minutes
Makes 12


  • 50g salted butter 
  • 100g soft brown sugar
  • 100g golden syrup 
  • 225g Golden Cloud cake flour
  • 2t Bicarbonate of soda
  • 1t Ginger powder
  • 1/2t cinnamon 
  • 1/2t nutmeg 
  • 30ml milk
  • Beacon Heavenly milk chocolate and jelly tots to decorate.





  1. Place a saucepan on medium heat. Add in the butter, soft brown sugar and golden syrup.
  2.  Stir until the butter has melted and the sugar has dissolved. Remove from heat and set aside to cool.
  3.  In a large bowl, sift in the flour, bicarbonate of soda, ginger, cinnamon and nutmeg.
  4. Pour in the cooled sugar syrup and mix till well combined.
  5. The milk is the binding agent, so you add a little by little until the dough comes together.
  6. Using a spatula, mix until the dough comes together.  The dough should be soft and not sticky. 
  7. Wrap the dough in cling film and allow to chill in the fridge for 30 minutes.
  8. Preheat the oven to 160°C
  9. Line a baking sheet with baking paper.
  10. Add a dusting on Golden cloud cake flour to a clean work surface.
  11. Place the dough in the middle of the floured work surface and dust a little more Golden Cloud cake flour over the top of the dough.
  12. Roll the dough out to 5mm thickness and cut out the gingerbread men using a floured cookie cutter.
  13. Transfer the cookies to the lined baking sheet bake for 15 minutes.
  14. Allow the cookies to cool completely in the tray before moving to a baking rack.
  15. Melt the Beacon Heavenly Milk chocolate in the microwave and use it as the glue to stick on the eyes, mouth and jelly tot buttons.
  16. Decorate as desired!
