Lemon Drizzle Cake Recipe

Ingredients
- 225g soft unsalted butter
- 225g caster sugar
- 4 eggs
- 225g Golden Cloud Self-Raising Flour
- 1 lemon, zested
- 1½ lemons, juiced
- 85g caster sugar
Method
- Heat the oven to 180 °C and line a 8x21cm loaf tin with baking paper.
- Cream the butter and caster sugar, then add the eggs slowly and combine thoroughly.
- Sift in the Golden Cloud Self-Raising Flour, then add the lemon zest and mix until well combined.
- Spoon the mixture into your prepared loaf tin and level the top with a spoon.
- Bake for 45-50 mins or until a toothpick inserted into the centre of the cake comes out clean.
- While the cake is cooling, mix together lemon juice and caster sugar to make the drizzle.
- Prick the warm cake all over with a skewer or fork, then pour over the drizzle.
- Allow the cake to cool in the tin before serving.
