225g soft unsalted butter

225g caster sugar

4 eggs

225g Golden Cloud Self-Raising Flour

1 lemon, zested

1½ lemons, juiced

85g caster sugar
Method

Heat the oven to 180 °C and line a 8x21cm loaf tin with baking paper.

Cream the butter and caster sugar, then add the eggs slowly and combine thoroughly.

Sift in the Golden Cloud Self-Raising Flour, then add the lemon zest and mix until well combined.

Spoon the mixture into your prepared loaf tin and level the top with a spoon.

Bake for 45-50 mins / until a toothpick is inserted into the center of the cake & it comes out clean.

While the cake is cooling, mix together lemon juice and caster sugar to make the drizzle.

Prick the warm cake all over with a skewer or fork, then pour over the drizzle.
