- 1/2 cup unsalted butter, softened
- 4 cups confectioners' sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease two 9-inch cake pans with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- In another mixing bowl, beat together the oil, buttermilk, eggs, food colouring, vanilla extract, and white vinegar until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until the batter is smooth and well combined.
- Divide the batter evenly between the two cake pans, and bake for 25-30 minutes or until a toothpick inserted into the centre of the cake comes out clean.
- Allow the cakes to cool completely in their pans before removing and placing them on a wire rack.
- While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat together the cream cheese, butter, confectioners' sugar, and vanilla extract until smooth and creamy.
- Once the cakes are cooled, spread a generous layer of frosting on top of one of the cakes.
- Carefully place the second cake on top of the first, and then spread frosting all over the top and sides of the cake.
