500g GOLDEN CLOUD VANILLA MUFFIN MIX
5ml (1 teaspoon) cinnamon
19ml (¾ cup) milk
4 ripe bananas
sunflower oil for deep-frying
castor sugar for dusting
- Place Golden Cloud muffin mix and cinnamon in a bowl, using an electric mixer or rotary beater, beat in eggs one at a time. Slowly add milk and mix until the batter is smooth and stretches like a ribbon.
- Slice bananas, place in a bowl, mash bananas with a fork into a smooth puree. Stir puree into batter and let mixture rest for at least 30 minutes before frying.
- Heat oil in a deep saucepan. Drop 2 tablespoons of banana batter into the hot oil, deep-frying 2 or 3 fritters at a time leaving enough space so they can spread.
- Fry until golden brown, turning once with a slotted spoon. Drain on paper towels. Sprinkle with castor sugar and serve warm with custard or sweetened whipped cream.
You can also use this mixture to make banana bread. Add a cup of chocolate chips or chopped walnuts to the dough and bake for 45 minutes at 180 degrees C.
