Pecan Pie Recipe

Ingredients
- 1 ½ cups Golden Cloud Cake Flour
- ½ tsp salt
- 2 tbsp white sugar
- ½ cup butter, chilled
- 4 tbsp ice water
- 3 eggs, beaten
- ¾ cup + 2 tbsp golden syrup
- ¾ cup light brown sugar
- 3 tbsp butter, melted
- ½ cup pecans, finely crushed
- 1 cup pecans, quartered
- 1 cup pecan, halved
Method
- Preheat oven to 175 °C.
- In a medium bowl, combine flour, salt and white sugar for the crust. Cut butter into flour mixture until it resembles coarse crumbs.
- Sprinkle water gradually over the dry mixture, stirring until dough comes together into a ball.
- On a floured surface, flatten dough with a rolling pin. Roll out into a circle that is 2.5cm larger than your 22cm pie dish.
- Place the pie shell into the pie dish and refrigerate.
- In another bowl, mix together eggs, syrup, brown sugar, butter, salt and finely crushed pecans.
- Spread quartered pecans over bottom of refrigerated pie crust. Pour mixture over the top of pecans, then arrange pecan halves on top of your pie.
- Bake in a preheated 175°C oven for one hour or until firm.
- Allow to cool for at least one hour before serving.
