Ingredients

  • 1 ½ cups Golden Cloud Cake Flour
  • ½ tsp salt
  • 2 tbsp white sugar
  • ½ cup butter, chilled
  • 4 tbsp ice water
  • 3 eggs, beaten
  • ¾ cup + 2 tbsp golden syrup
  • ¾ cup light brown sugar
  • 3 tbsp butter, melted
  • ½ cup pecans, finely crushed
  • 1 cup pecans, quartered
  • 1 cup pecan, halved
 

Method 

  1. Preheat oven to 175 °C.
  2. In a medium bowl, combine flour, salt and white sugar for the crust. Cut butter into flour mixture until it resembles coarse crumbs.
  3. Sprinkle water gradually over the dry mixture, stirring until dough comes together into a ball.
  4. On a floured surface, flatten dough with a rolling pin. Roll out into a circle that is 2.5cm larger than your 22cm pie dish.
  5. Place the pie shell into the pie dish and refrigerate.
  6. In another bowl, mix together eggs, syrup, brown sugar, butter, salt and finely crushed pecans.
  7. Spread quartered pecans over bottom of refrigerated pie crust. Pour mixture over the top of pecans, then arrange pecan halves on top of your pie.
  8. Bake in a preheated 175°C oven for one hour or until firm.
  9. Allow to cool for at least one hour before serving.
