Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup sour cream
  • 1 pound fresh strawberries, hulled and sliced

For the Whipped Cream Frosting:

  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a small bowl, whisk together the milk and sour cream.
  5. Add the dry ingredients to the butter mixture in three parts, alternating with the milk mixture in two parts. Stir until just combined.

  7. Bake for 25-30 minutes or until a toothpick inserted into the centre of the cake comes out clean.
  8. Let the cakes cool in the pans for 5-10 minutes before transferring them to a wire rack to cool completely.
  9. To make the whipped cream frosting, combine the heavy cream, powdered sugar, and vanilla extract in a large bowl. Using an electric mixer, beat the mixture until stiff peaks form.
  10. To assemble the cake, place one cake layer on a serving plate. Spread a layer of whipped cream frosting on top, followed by a layer of sliced strawberries. Repeat with the second cake layer.
  11. Finish by spreading a layer of whipped cream frosting on top and decorating with additional strawberries.
  12. Chill the cake in the refrigerator for at least 1 hour before serving.
