Carrot Loaf

1 packet Golden Cloud Carrot cake loaf and muffin mix

2 Eggs

225ml Water
-
100ml Oil
Cream Cheese Frosting

250g Soften Cream Cheese

50g unsalted butter, room temperature

300g Icing Sugar
Method

Preheat the oven to 180^C and line a 23cm loaf pan with baking paper.

In a large bowl, add in the Golden Cloud Carrot cake loaf and muffin mix.

Create a well in the centre and crack in the eggs. Beat the eggs a bit.

Add in the water and oil and mix until well combined.

Transfer the batter to the loaf pan and bake for 35 minutes.

Allow to cool completely in the loaf dish.

For the frosting, beat the cream cheese and butter together for 2 minutes.

Sift your icing sugar in, in 2 additions, mixing well after each addition.

Frost your loaf as desired and grate over a little milk chocolate.
